Tabbouleh
Ingredients
for 4 servings:
- 100 g couscous
- ½ cup of water
- 1 spring onion
- 1 tomato
- A few sprigs of parsley and mint
- Juice of ½ a lemon
- 1 tablespoon of olive oil
Method
- To cook the couscous, bring the water to the boil, removing it from the heat and adding the couscous. Leave to rest for 3-5 minutes.
- Finely chop the onion, tomato, parsley and mint. Combine all of the ingredients in a bowl.
- Season the mixture in the bowl with oil and lemon.
- Combine the contents of the bowl with the couscous.
