Ingredients
- 60 ml of herby Tofu sauce (see recipe)
- 100g buckwheat noodles or portion of pasta of your choice
- ½ teaspoon salt
- water
- mixed steamed vegetables – e.g. broccoli, carrots, beans, courgette
- fresh herbs for garnish
- lemon wedge
- nutritional yeast (optional)
- Heat water with the salt in a saucepan and cook the pasta according to the instructions.
- Steam your selected vegetables until just tender.
- Drain the pasta and place in a bowl. If using buckwheat soba noodles drain and rinse.
- Add the vegetables and drizzle over the sauce.
- Garnish with fresh herbs, lemon wedge and sprinkle of nutritional yeast if using.
