1/4 teaspoon of spice of your choice e.g. ground cumin
Salt & pepper for seasoning to taste
1 tablespoon lemon juice
Fresh herbs & nutritional yeast for garnish
Mixed salad leaves
Prick the potato 10 times using a fork.
If microwaving – wrap potato in a piece of kitchen towel and pop in microwave. Cook according to your microwave instructions until the potato is cooked through. Alternatively cook in an oven at about 200º until a knife pierces through to centre with ease (about 45 minutes).
While the potato is cooking, place all the other ingredients in a bowl and mix well. Add seasoning to your taste.
Remove from the oven or microwave and cut in half.
Place the tuna mix on top and sprinkle over fresh herbs and nutritional yeast if using and serve with the green salad leaves dressed with lemon juice or apple cider vinegar.
