Rainbow Veggie pasta

Ingredients
- 1/2 Tin of tomatoes
- 1 onion – finely sliced
- Salt & Pepper
- 75g pasta
- Steamed Broccoli & Carrots
- Sprinkle of Nutritional yeast (optional)
- Fresh Basil – finely chopped
Method
- Heat 2 tablespoons of vegetable stock in a frying pan
- Add the sliced onion and sauté until softened.
- Add the tomatoes & seasoning – simmer for 20 minutes. Blend if smooth sauce required.
- Meanwhile cook the pasta & vegetables.
- To Serve pour sauce over pasta & Vegetables.
- Sprinkle over nutritional yeast & fresh chopped basil.
