Protein Salad Your Way


  • large plate of salad leaves
  • 6 cherry tomatoes – halved – reserve any juices for salad dressing
  • 1/4 cucumber – thinly sliced
  • 1 red onion – thinly sliced
  • 1 tsp dried oregano
  • zest & juice of 1 lime
  • cooked prawns or chicken

Optional spice bomb

Simply dry fry (no oil) the following ingredients for 1 minute to release aroma and then crush in pestle & mortar or in mini spice food processor

  • 2 heaped tsp of cumin, coriander & mustard seeds
  • 1 tsp chilli flakes


  1. Place salad leaves on a plate and top with the rest of the ingredients.
  2. Scatter crushed spices on top.
  3. Add some protein: e.g., cooked prawns, chicken, white crab meat, octopus.
  4. Just before serving your protein salad drizzle with lime zest & juice, plus any tomato juice, dried oregano and season with salt and pepper.
