Gazpacho

Ingredients

for 4 servings:

  • 1 kg of ripe tomatoes
  • ½ a cucumber
  • ½ a red pepper
  • ½ a green pepper
  • ½ an onion
  • 1 garlic
  • 150 ml water

Method

  1. Remove the stalks from the tomatoes.
  2. Chop all the vegetables.
  3. Combine all of the ingredients and blend until smooth. If you want to get rid of any lumps, pass the mixture through a sieve.
  4. Leave it to rest in the fridge for at least 2 hours and serve chilled.
