Chilli Chicken Breast


  • Spicy mix: (made of 1 tsp brown sugar, 1/2 tsp paprika, 1/2 dried Parsley, pinch of salt, 1/2 tsp onion powder, 1/2 chilli powder &1/2 tsp black Pepper)
  • 1 clove of garlic – crushed
  • 1 chicken breast – if skin on remove after cooking
  • 2 tbsps./30 ml of chicken/vegetable stock


  1. Preheat oven to 200º
  2. cut breast into half so it is 2cm thick (use a rolling pin to bash thinner if required).
  3. Line a baking tray with baking paper & place chicken on paper. Rub spicy mix all over. drizzle stock around & over chicken. Bake for about 16 minutes & grill to brown for last 2 minutes (if necessary). Rest for 5-10 minutes before serving with steamed vegetables/Salad & Potatoes or rice.
